Coconut Keto Snowballs

yield 7-10 snowballs

2 cups shredded coconut
1/4 cup full fat coconut milk
2 tablespoons organic stevia or monk fruit
Pinch of pink salt
1/8 teaspoon vanilla extract
20 drops of Peppermint essential oil, (optional)

Step #1:  In a high-speed blender or food processor, add coconut and blend until a powder texture
Step #2:  Add sweetener and coconut milk and vanilla and blend until a thick batter forms
Step #3:  Add a little extra coconut milk if batter is too crumbly
Step #4:  Slightly wet your hands and form the batter into small balls and place on a lined plate
Step #5:  Sprinkle with extra sweetener or cinnamon and refrigerate until they firm up
